Instead, the apple flavor in this recipe comes from fresh apples themselves!

This salad is simple to whip up and delicious for parents and kids! No eggs or dairy means it's perfect if your family has these food allergies. Don't worry, the secret ingredient means there's no lack of flavor.

Ingredients

Main Eggless Potato Salad Ingredients
  • 1/4 of a medium-sized red onion, finely chopped
  • 1.5 lbs of potatoes, cut into bite-size pieces and boiled until tender (about 12 minutes)
  • 1 red lady apple, chopped into bite-sized pieces (or whatever kind of crisp apple you have)
  • 1 handful of parsley, chopped
Potato Vinegar Salad Dressing Ingredients:
  • Juice of 1 lemon
  • 2 tbsp oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp white sugar
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1 clove garlic (minced-use the cool gadget in the video to make this easy).

Instructions

  1. Chop and mix all salad ingredients together.
  2. Mix the vinaigrette ingredients together.
  3. Pour the vinaigrette dressing over the salad.  Mix and enjoy!
