Now, let’s get to that allergy-free dessert recipe…

Who can resist a bit of chocolate on Valentine’s Day (or any day really)?

Especially with these pink marshmallows, your kids will LOVE to devour this simple-to-make yet delicious nut-free dessert treat. They’re reminiscent of a rocky road bar I loved when I was a kid so I knew I had to make a copy-cat version!

What’s even better?

No baking involved, just a medium saucepan and a parchment-lined 9 x 9 pan.

Top 8 Allergy-Free Dessert | Nut-Free Dessert | Rocky Road Bars

Your kids will LOVE to devour these simple, yet delicious top allergy-free goodies. They're similar to the rocky road bar I loved as a kid.

Ingredients

  • 5 cups of mini marshmallows * I used Kraft brand
  • 1/4 cup coconut oil*
  • 3/4 cup WowButter (if soy is ok for your family OR use Sunbutter for a top 8 allergy-free option)
  • 2 cups semi-sweet, allergy-safe chocolate chips (Enjoy Life brand are dairy-free, nut-free and make a top 8 allergy-free dessert).

Instructions

  1. Grease a 9 x 9"  pan with oil on a paper towel.  Line with parchment paper.
  2. Melt coconut oil, Wowbutter (or Sunbutter), and chocolate in a medium saucepan over medium-low heat (watch carefully so it doesn't burn).  Stir continuously while melting.
  3. Take it off the heat.
  4. Add marshmallows and stir well until they are completely coated in chocolate.
  5. Pour the mixture into the baking dish and push the mixture into the corners of the pan.
  6. Chill in the fridge for about 2-3 hours before cutting into bars.
  7. Enjoy! Store in an air-tight container in the fridge or freezer until right before serving.

Notes:

  • If your child has nut allergies, check with your Allergist to see if coconut oil is safe for your child.
  • If you like to have more of a "rocky road" texture, use crunchy versions of Wowbutter or Sunbutter. If you like smooth and silky texture, use the smooth versions.
