Now let’s get to that dairy-free dessert, Blueberry Peach Fruit Crumble…

It’s almost Easter and while I write this we are in the middle of the COVID-19 crisis. We’re staying safe at home and keeping our social distance.

During this time you’re likely running out of good allergy-friendly recipes that your family loves. And not only that but you’re likely looking for a delicious dairy-free dessert recipe that you can share with your family on Easter (even if it’s just your family instead of the usual crowd).

Look no further because this delicious dairy-free dessert can be dressed up or down depending on what you want it for. I’ve got the “dressed down” version you can use for everyday breakfasts in my free meal plan, but I’m going to dress it up as the perfect dairy-free dessert or Easter brunch recipe in this post.

Keep in mind that you can easily substitute the blueberries and peaches with ANY fresh, frozen or canned fruit you have on hand. Not only that, but the topping is made with things you likely have in your pantry RIGHT now, so it’s the perfect dish to make any time.

Please note, as, with all of my recipes, I like to make them “allergen flexible”. This means that if there is a top 8 allergen listed, I’ll give you an allergy-friendly replacement in the brackets beside the ingredients. This way not everybody has to remove every allergen, but kids and family members will any of the top 8 allergens are included.

Always make sure each ingredient is safe for your family before making and serving.

Ingredients

Topping
  • 2 cups quick oats (or shredded coconut or quinoa flakes)
  • 3/4 cup flour (or 2 cups allergy-friendly dry cereal like Made Good Rice Crisp Cereal or other safe cereal pounded into a scant 3/4 cup of fine powder).
  • 3/4 cup packed brown sugar
  • 1/2 tsp cinnamon
  • 2 pinches salt
  • 1/2 of a large, ripe avocado ( Yes, avocado is an amazing substitute for butter. I dare you to try it!)
Filling
  • 6 cups diced peaches (fresh, canned, or frozen*)
  • 2 cups blueberries (fresh, canned, or frozen*)
  • 1/4 - 1/2 cup white sugar (if using optional vanilla topping you may want to choose less sugar).
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • *If the fruit is frozen, let it come to room temp.
Dairy-Free Custard (Optional)
  • 1 package Vanilla Jello Cook & Serve Pudding
  • 3 cups of your favorite dairy-free milk replacer

Instructions

  1. Grease a 9 x 9 pan with butter OR oil on a paper towel.
  2. Mix together fruit filling ingredients and place in greased pan.
  3. Mix together the first 5 ingredients of the topping. Cut in avocado until blended and topping holds together when squished.
  4. Place topping on top of the fruit. Cover with foil.
  5. Bake in a 375-degree oven until fruit is bubbling, about 45-50 minutes. If desired, remove foil and cook an additional 5 minutes to make the topping brown and crispy.
  6. Meanwhile, cook Jello Vanilla Cook & Serve Pudding as per package directions.
  7. Eat while warm by itself OR top with coconut whipping cream, optional vanilla topping above OR your favorite dairy-free dessert topping, or allergy-friendly whipped topping.
